Spaghetti With a Light Bacon Cream Sauce

Who doesn’t like spaghetti? We all love it because it is easy, tastes great and there are many ways to make it. This one comes with a creamy bacon sauce, and as we all know, bacon makes it better! Serve with your choice of bread sticks or garlic bread and your friends or family will love every bit of it.

Ingredients

  • 1 (16-ounce) package spaghetti
  • 12 ounces bacon, chopped into 1-inch-wide pieces
  • 3 cloves garlic, peeled
  • 2 tablespoons tomato paste
  • 1 cup heavy whipping cream
  • freshly ground black pepper, to taste

Directions

In a large pot of salted, boiling water, cook the spaghetti to al dente, according to the package directions. Reserve 1/2 cup of the pasta water, then drain the rest. Meanwhile, in a large skillet over medium-low heat, add the bacon pieces and cook until they are crisp about 7-9 minutes. Place the cooked bacon on a paper-towel-lined plate or drain rack and let it drain off grease. Reserve 1 tablespoon of the bacon drippings in the skillet and discard the rest.

In the same skillet over medium heat, add the garlic cloves to the bacon drippings and cook, stirring frequently, until they are soft-cooked. about 1-2 minutes. Add the tomato paste to the garlic cloves and cook, stirring frequently, about 1 minute. Add the heavy whipping cream to the sauce mixture and cook, whisking frequently, until it begins to bubble and thicken, about 2-3 minutes. If it becomes too thick, add enough of the reserved pasta water so that the sauce barely coats the back of a spoon. The sauce shouldn’t be too thick yet thick enough to stick to the pasta.
