Roasted Chicken & Veggies

Here we are again, another day and another meal to come up with. As always though we are here with a perfect solution, a Roasted Chicken & Veggies that you can make in as little as 20 minutes! Not only that, but as hard as it is to get the little on to eat their veggies, this meal makes it easy!  So take a load off tonight and make this quick and easy Roastd Chicken & Veggies

Ingredients

  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon paprika, optional
  • 2 medium chicken breasts, cubed
  • 1 cup bell pepper, chopped, any color
  • 1/2 onion, chopped
  • 1 zucchini, chopped
  • 1 cup broccoli florets, chopped
  • 1/2 cup tomatoes, chopped

Preheat the oven to 450 degrees F.

Bake time 15-18 min

Total time 30-40 minutes

Place the chicken, the bell pepper, the onion, the zucchini, the broccoli, and the tomatoes in a medium-sized baking dish or sheet pan.

Drizzle the olive oil on top of the chicken-vegetables mixture.

Sprinkle the salt, the pepper, the Italian seasoning, and the paprika, tossing it all together to combine.

Bake the dish until the vegetables are charred and the chicken is fully-cooked with an internal temperature of 165 degrees F, about 15-18 minutes.
